Let’s celebrate the first day of autumn with something from the oven! Make these muffins tonight or tomorrow night, and you’ll have a little something special to take to work or school (or both!) the next day. : : Make a double batch, and you’ll have extras to share. Give a muffin, make a friend! : : Many of the ingredients for these muffins can be purchased in bulk at People’s, including the flour, salt, cinnamon, sugars, and nuts. That’s great, because you can bring in your own container (or purchase re-usable containers at People’s) and help reduce packaging waste. Hooray! You deserve a muffin for that. : : First Day of Fall Banana Nut Muffins ·  1 1/2 cup unbleached white flour* ·  1 1/2 tsp. baking soda ·  1/4 tsp. sea salt ·  1/2 tsp. cinnamon ·  1/2 cup, butter or butter substitute, melted ·  3 ripe bananas mashed ·  1 banana cut into ½-inch coins ·  1/2 cup evaporate cane sugar ·  1/4 cup coconut sugar crystals ·  1/4 cup dairy or plant milk ·  1 large egg or egg substitute ·  1 tsp. real vanilla extract · 1 cup walnuts or pecans or 1/2 cup each : : Preheat oven to 350°F. In a large bowl, mix the dry ingredients, except the sugar, together. In another bowl, add mashed bananas, melted butter, sugar, milk, egg and vanilla. Combine wet ingredients with the dry ingredients until just combined, taking care to not over mix. : : Fold in the nuts. Spoon batter evenly into 12 paper-lined muffin cups. Top each muffin with a banana coin. Bake for about 25 minutes or until muffins are golden brown and a toothpick or knife inserted into center comes out clean. Place muffin pan on a wire rack and let cook for five minutes. Since I got back from Europe two weeks ago I have been working out everyday & pushing myself to be the healthiest version of myself possible. This has resulted into the best version of myself. I feel fricken AMAZING. Sometimes I really don’t feel like going to the gym or yoga but I force myself to. Never ever do I regret it. Getting at least 7 hours of sleep, eating clean 80% of the time, staying hydrated, and minimum drinking is making me feel clear and level-headed while still running two businesses and working two other jobs. Priorities are so important. I pick my top 5 and make sure to stick with them. In no particular order: 1.Myself (fitness, healthy eating, self-care) 2. Family 3. Business 4. Close friends 5. Yogic life Because I have minimal free time, when I make a decision I review my priorities and see if my action will meet something on my list. As Gandhi says, “actions expresses priorities.” 🙏🏼✌🏼✨
